Ingredients for 6 people

  • 3 eggs
  • 150 g of sugar
  • 80 g coffee beans
  • 130 ml whole milk
  • 120 g of flour
  • 40 g potato starch
  • 70 g of butter
  • a bag of baking powder
  • a cup of espresso
  • granulated sugar to taste


To prepare this plum cake, we prepare a cup of espresso, let it cool and add it to the cold milk from the fridge and proceed to the preparation of the dough.

We put eggs and sugar in a bowl, with the electric whisk we work until the mixture is homogeneous and fluffy. Gradually mix the sifted flour and starch, milk, cubed butter, milk and coffee, baking powder and as soon as the mixture is homogeneous, add the coffee beans. Mix with the spatula and pour the dough into the plum cake tin and let it cook in a preheated oven at 180° for 35 minutes and then take it out of the oven.

We only take the plum cake out of the mold when it has cooled down, so there is no risk of it breaking. All that remains is to serve it after dusting with powdered sugar.
