Delicious this coffee parfait with biscuits without cream and cooking and with fresh ricotta

In this heat it is perfect to enjoy something cold. And of course good too. For example, you can prepare a dessert similar to ice cream, which does not need to be cooked in the oven. For this purpose, we can try to make a parfait, a really inviting spoon dessert that refreshes the palate. This is due to the special feature of the fact that it is served cold. We can try to give it a coffee aroma with the help of a soluble product.

We will then use very crumbly biscuits as a base, as a robbery. In this way, we will give it consistency. While instead of cream, which is usually one of the ingredients in parfaits, we use two egg whites. In the preparation, and in the final, we will also use fresh ricotta. So let’s see how to prepare this recipe.

The ingredients will be as follows:

  • 200 g fresh sheep ricotta;
  • 60 g white sugar;
  • 200 g cocoa trays;
  • 2 egg whites;
  • 2 tablespoons instant coffee.

To prepare semifreddo, we start breaking the eggs and separating the yolks from the white. Take the egg whites and beat them stiff with half the sugar. We process the ricotta with the remaining half of the sugar and 2 tablespoons of soluble coffee. We try to get a mixture that is as homogeneous and even as possible. Add the beaten egg whites, mix them well.

Now let’s take a loaf of bread and cover the inside with cling film. At the base, we arrange the cocoa trays to create a layer that covers the entire surface. We pour half of the obtained preparation on this layer and then cover with another layer of biscuits. Now pour the other half of the preparation and finish with another row of wafers. We cover with cling film and place in the fridge for 60 minutes.

When the time has passed, this coffee parfait will be really delicious, which we can take from the fridge and turn upside down on a serving tray. We can then decorate the surface with ricotta curls to be enjoyed with a spoon. And with the top, again and possibly, a splash of bitter cocoa powder.
