Shortcrust pastry
To create the puff pastry we must use:
- 1 egg
- 100 grams of powdered sugar
- 290 grams of flour 00
- 150 g butter
- 5 gr baking powder
- 30 grams of unsweetened cocoa powder
Pour cocoa powder, flour, chopped butter, baking powder and sugar into a large bowl. Then we start working with the ingredients. Once you have a sandy mixture, add the vanilla extract and the egg and then start mixing everything again. We are working on creating a dough to rest in the fridge after wrapping it in cling film.
Now we can take care of the preparation of the custard.
Custard
The ingredients we need to choose are:
- 60 grams of flour 00
- 150 ml of coffee
- 150 grams of powdered sugar
- a few drops of vanilla essence
- 350 ml whole milk
- 3 egg yolks
In this case, we have to put a saucepan on a stove and take in the coffee, obtained from suede, and the milk. While the mixture is heating up, take a bowl and mix in the vanilla essence, egg yolks and powdered sugar. When everything is homogeneous, add the flour. Then we take the result in the saucepan and continue to cook while stirring constantly. I recommend that you keep a gentle flame so that the cream is perfectly smooth.
When the cream is ready, assemble the cake.
Preparation of the cake
We take the dough and divide it in half. Then we roll out the larger half with a rolling pin. Then place it in a pan, previously floured and greased, of 24 centimeters. We continue to pour the cream and smooth it well. At this point, we take the pastry aside and make the classic decorative strips of a cake. We apply the result on the cream and then close the edges correctly.
All that remains is to take the pan into a preheated and static oven and cook for about 35 minutes at 180 degrees.
Finally we take a fork and taste our delicious grandfather’s cake.
