Ingredients for about 10 mini-plum cakes
300 g Manitoba flour for desserts
150 g cornstarch
150 g of butter
250 g mascarpone
125 g sweetened whipped cream
150 g of sugar
1 bag of baking powder
2 cups of coffee
70 g almond leaves

To make these little treats, it really is that simple. Start by pouring the mascarpone into a large bowl and start working with a whisk, mixing the ingredients gradually, starting with the sugar and when it is absorbed, add the eggs one at a time. Then continue to mix in the warmed melted butter and so on, setting aside a small amount of almond leaves for decoration. Stir until you get a thick and fluffy mousse-like mixture.
Separately, whip the cream until stiff and incorporate it into the dough using circular movements from the bottom up. When a homogeneous mixture has been obtained, the already sweetened coffee must finally be added, spreading it without mixing well, allowing the veins of a classic variegation to be noticed.
