Ingredients for about 8 servings

For the cream

500 g mascarpone
200 g sugar
4 eggs

For coffee sponge cake

150 g flour 00
150 g sugar
5 eggs
A pinch of salt
15 g instant coffee
3 g baking powder


Cocoa to taste
250 g sweetened whipped cream
125 g milk
1 cup of coffee
1 tablespoon instant coffee

Preparation of Tortamisù

To make this cake, we start from the base by pouring the eggs into a bowl, add the sugar and start whisking with a whisk, gradually incorporating other ingredients. Mix until the mixture is smooth and homogeneous. Pour it into any hinge shape lined with parchment paper. Cook it in a preheated ventilated oven at 170 degrees for 30/35 minutes.


Meanwhile, prepare the cream, separate the egg yolks from the whites, whisk the latter until stiff with half the specified amount of sugar, set aside. Also beat the egg yolks with the remaining sugar, add the mascarpone and mix until the mixture is homogeneous. Then add the egg whites a little at a time, mixing with circular movements from the bottom up.

In a separate bowl, pour the cream, add instant coffee and mix it must be very firm. Divide the sponge cake into layers, soak them with a mixture of milk and coffee, fill them with the mascarpone cream, also cover the outside.
